Happy Easter

What a great day it is to celebrate our Savior Jesus Christ. He died on the cross for our sins and rose on the third day. That is why we celebrate him today on Easter (and everyday!). Happy Easter, He has risen!

Raspberry Swiss Chocolate Cupcakes

Swiss Chocolate Cupcakes with Raspberry Filling and Raspberry Buttercream Frosting

These cupcakes are so yummy and are sure to please any crowd. I am using them for an Easter Cook off tomorrow (Easter) at church.

What you need:
Swiss Chocolate Cake Mix (follow the ingredients on the package.
Raspberry Filling
Raspberry Buttercream

How do you make Raspberry Filling?
  • 1 12 oz. bag frozen raspberries
  • 1/2 cup to 1 cup sugar (depending on how sweet you want it)
  • 3 tablespoons cornstarch
  • 1 tsp lemon juice
Mix all the ingredients together and bring to a boil on the stove and when its cooled it should be good to go.

How do you make Raspberry Buttercream?

First you take the traditional buttercream recipe  but you will omit the water and food coloring and instead add 1/3 cup of the raspberry filling to the mix. This will make the buttercream taste like raspberries and will turn it a lovely shade of pink.

1 stick butter
1/2 stick shortening
1 teaspoon vanilla
1/8 teaspoon salt
4 cups powdered sugar
2 or 3 tablespoons of water
*Food Coloring if desired

1. Cream together the butter and shortening
2. Add in the vanilla and salt
3. Slowly add in the powdered sugar
4. After everything is mixed together add water until it is a desired consistency.
5. Add a food color if color is desired

*Yield 3 Cups

How do I fill and decorate the cupcakes?

  • To fill the cupcakes you will need to either inject the filling inside or to remove the middle and add filling and then put the top back on.
  • To decorate the cupcakes you need to fill a frosting bag and then pipe it onto the cupcakes.
  • To make marshmallow flowers you cut the marshmallows in half with scissors and then dip the sticky side into sprinkles.

Easter Chick Cake

How to Make an Easter Chick Cake

What Do You Need?
  • For the cake...
    • Cake Mix (White or Yellow)
    • Yellow Food Coloring
    • 3 Eggs
    • 1 cup Water
    • 1/4 cup Oil
  • Buttercream Frosting
    • 1 Stick of Butter
    • 1/2 Stick of Shortening
    • 4 cups Powdered Sugar
    • 1 teaspoon Vanilla
    • Yellow and Orange Food Coloring
    • 1/8 teaspoon Salt
    • 2 or 3 tablespoons Water
  • Decorations
    • 2 Chocolate Kisses
    • Yellow Sprinkles
    • Yellow Frosting
    • Orange Frosting

How?
  • To make the cake follow the directions on the cake box and then add a few drops of yellow food coloring until it is a yellow shade you like. Bake the cake in two round pans according to the box directions.
  • To make the frosting
    • First, cream together the butter and shortening
    • Next add the vanilla and salt
    • Slowly add in the powdered sugar
    • After everything is mixed together add in a little bit of water at a time to make it a spreadable consistency
    • Add yellow food coloring until it is the desired color

How to Stack and Decorate the Cake?
  • First, while the cakes are slightly warm flip them onto plates to remove them from the pan.
  • Second, cut the rounded top off of one of the cakes.
  • Third, after the two cakes have cooled completely, place the cut cake on the serving platter and then spread a thin layer of frosting on the top to form a seal between the two cakes. After you have the layer of frosting put the other cake on top rounded side up.
  • Fourth, it is time to frost the cake. (Save a little bit of frosting to color orange) Place most (save a little big of yellow) of the frosting and work it around until the entire cake is covered.
  • Fifth, sprinkle the top of the cake with a heavy layer of yellow sprinkles
  • Sixth, Color the frosting you saved orange and place into a frosting bag or a sandwich size zip-lock bag with the corner cut off. This will be used to draw the feet, nose, and wings. Place the remaining yellow frosting that you saved into a frosting bag or sandwich size zip-lock bag for the wings.
  • Seventh, place the chocolate kisses about halfway in the cake and draw to dots for the eyes.
  • Last, take the frosting you colored orange to draw a triangular shaped nose/mouth and three lines on the bottom made into a triangle for the feet. Then take the yellow bag and draw three lines in a triangular shape to be the wings.
